Start the year with Low Carb and High Protein

Low Carb Egg Roll

  • 1 lb. ground meat 

    • ground pork, ground chicken or tofu

  • 2 tablespoons of Extra Virgin olive oil

  • 1 small sweet onion, thin sliced (julienne)

  • 2 teaspoons minced fresh garlic-  2-4 cloves (Garlic powder= ¼ teaspoon)

  • 2 tablespoons grated fresh ginger (dry ginger powder= ½ teaspoon)

  • 1 red pepper, thin sliced (julienne)

  • 1 tablespoon sesame oil

  • 1 tablespoon rice vinegar

  • ¼ cup less sodium soy sauce

  • 2 tablespoons hoisin sauce 

  • 1 (14 ounce) bag coleslaw mix

  • 1 bag of Shirataki Noodles, drained and rinsed well (or cooked Ramen noodles)

  • 4 green onions, thinly sliced, reserve half

Optional ingredients for your family to add on their own

  • Sesame seeds

  • Green onions

  • Chopped Peanuts

  • Cilantro, chopped or leaves

  • Sriracha Sauce

Instructions

·         Heat a large skillet over medium-high heat. Add ground meat and cook, stirring, until no longer pink, about 5-7 minutes. Drain off excess fat and set the meat aside.  If you are using tofu, add the drained rough chopped tofu into the next step.

 

·         Add EVOO, garlic and ginger and cook on medium heat for 1 minutes then add sweet onions for an additional 2 minutes.

 

·         Add reserved cooked meat, red peppers and shirataki noodles heat for 2-3 minutes.

 

·         In a small bowl, mix together the Sesame oil, Rice Vinegar, soy and hoisin sauce and add to the pan.

 

·         Remove the skillet from the heat. Stir in half of green onions and serve 😊

Peanut butter yogurt Dip

2 Cup Plain Greek Yogurt

1/2 Cup All-natural Creamy Peanut Butter

 2 Tbsp Honey or Maple Syrup

1/2 teaspoon Cinnamon

 

Optional ingredients to stir in:

Chocolate Chips or Sugar Free Chocolate chips

2 tablespoons of Strawberry jam or Grape jelly- but omit the honey/maple syrup

 

Easy serve dippers

·        Sliced Apples
