Fresh Take on St. Patricks Day

 Zucchini, Feta and Spinach Fritters with “Store- bought” Tzatziki

Servings:  8

·         4 medium Zucchini, grated

·         4 ounces of Feta Cheese

·         2 ounces of Fresh Spinach

·         4 each Green onions, sliced- reserve some for topping your fritters

·         ½ cup of flour

·         1 teaspoon of baking powder

·         6 large Eggs

·         1/4 teaspoon of Salt

·         1/4 teaspoon of Pepper, ground

·         2 tablespoons of Olive Oil

  1. Grate the zucchini into a colander with paper towels and squeeze out as much liquid as possible.

  2. Mix the drained zucchini and the remaining ingredients in a bowl and refrigerate until ready to use.

  3. Pour oil into a non-stick frying pan over medium heat and scoop 1/4 cup of the fritter mix into the hot oil, pushing them gently into a flattened, round shape. Depending on the size of your pan, you may need to cook these in a couple of batches.

  4. After 2-3 minutes, gently flip the fritters over, remembering to flip them away from you to prevent the oil from splashing.

  5. The fritters will be cooked through after another 2-3 minutes. Remove from the pan and enjoy.

  6. Top with tzatziki if desired!

Irish Flag Salad

Servings:  6

 Ingredients:

  • 6 cups of Leafy greens (Spring Mix for example) (8 oz)

  • 8 oz can of Drained Mandarin oranges

  • 1 English Cucumber, halved and thinly sliced

  • 1 medium Avocado, cored and sliced

  • ½ Sweet Onion, Sliced Thinly

  • 2 oz. Crumbled Goat Cheese

  • ¼ cup of salted shelled pistachios

 Instructions:

  1. Place Greens in a serving bowl

  2. Add the remaining ingredients

  3. Toss with Honey White Balsamic Dressing

 Honey Balsamic Dressing

Servings: 

Ingredients 

  • ·         1/4 cup extra virgin olive oil

  • ·         2 tbsp white balsamic vinegar (or white vinegar if you don’t have)

  • ·         2 tbsp honey

  • ·         1/2 tsp kosher salt

  • ·         1/2 tsp freshly ground black pepper

Instructions

Combine all ingredients in a small jar. Close tightly with lid and shake well to combine. Store at room temperature.

Kiwi Mint Sparkling Mocktail

Servings: 

Ingredients:

3 ripe kiwi, peeled & mashed 1

1 lime, juiced

2 tbsp honey or simple syrup

6-8 fresh mint leaves 🧊

4 cups sparkling water

 Instructions:

·         Muddle kiwi, lime juice, mint, and honey in a glass or Pitcher

·         Fill with ice and top with sparkling water
